This is a large-volume prepared mix that is packed full of flavours of a holiday season, making it perfect for your celebration. Save the extra cordial for morning drinks, desserts, or to mix additional servings of this cocktail.
The Bikini Cocktail
Makes enough for 10 people
To make the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Drink (produces 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Directions
For the Cordial: Put the listed items inside a pan, heat until it reaches a gentle boil, agitating to dissolve. Then, remove from the burner and let it to cool completely. Decant to a sealable bottle, cap it and store in the refrigerator, it will last for around a month.
To make Premix: Combine all the liquids in a large bottle, leave to sit for 60 minutes, then filter it , ideally through cheesecloth, so it's fully clarified.
For serving: Add 85ml from the batch mix to a mixing glass containing ice, and stir gently for about 60 seconds until cold. Pour into an frosted cocktail glass or a similar vessel, decorate with some cranberries and finish with a light spray of mandarin oil over the top.
